Freekah Summer Salad

Here is a delicious, easy and healthy middle of the day meal to give you essential energy and satisfaction.

The star of this delicious and nutritious salad is Freekeh. Freekeh is a wonderful grain that is harvested early and then roasted. It gives off a robust smoky flavor and plumps up after its cooked. Cayuga uses Spelt which makes this Freekeh a low glycimic grain that is also high in protein.

Grains are a lovely addition to fresh raw veggies and also pair well with summer fruits too! They are rich in protein, vitamins, minerals and fiber!

How to make Freekeh Summer Salad

1 cup of Freekeh

1 cup of coconut milk

1 cup of water

1 lemon

1/2 Avocado

1/2 Papaya

1 cup Arugula

Bunch of Thai Basil

Grated Manchego cheese

Salt/Pepper

Rinse the grain for up to 10 minutes. Bring the water and the coconut milk to a boil and then squeeze in half a lemon. Put the grain in the pot, cover and bring down to a high simmer. The grain should soak up most if not all of the liquid, and be plumb and chewy after 45 minutes.

Cut up an avocado and papaya and mix with coconut infused Freekeh. Add a pinch of sea salt and black pepper.

Grap some fresh Arugula and sprinkle with olive oil and fresh squeezed lemon. Chop up some Thai Basil and mix. Place Freekeh salad on top of Arugula and garnish a little Manchego cheese.
